Ugly but Tasty Chocolate Chip Cookies

Ingredients

1 cup rolled oats
1/2 tsp baking soda
1/4 tsp salt
1/4 cup white sugar
1/4 cup muscovado sugar
1/3 cup chocolate chips
2 tbsp almond milk (or any other plant-based milk)
2 tbsp vegan butter
1/4 tsp vanilla extract

Procedure

Preheat the oven to 375 °F.

Grind the oats into a fine flour in a blender.

Melt the vegan butter.

In a bowl, whisk all the dry ingredients except for the chocolate chips.

In a different bowl, whisk the milk, melted vegan butter and vanilla.

Slowly add the liquids to the dry ingredients and mix until a dough forms.

Fold in the chocolate chips.

Shape the dough into small balls, place them on a baking tray lined with parchment paper and bake for 10–12 minutes. They should still be soft when you take them out.

Let cool before serving.
