Pasta with kale stems pesto

Ingredients

Prepare the pasta: add salt to the water and bring it to boil.

While the water is boiling, chop the kale stems.

Roast the walnuts in a pan at low/medium heat (5/9).

Mince the garlic.

Zest and squeeze the lemons.

When the water is boiling add the pasta and cook according to the package instructions (10-15 min).

Add all the ingredient for the pest in a food processor and blend until smooth.

When the pasta is ready, drain it and reserve a few tablespoons of the cooking water.

Mix the pasta with the pesto, adding some of the reserved cooking water to achieve the desired consistency.
